My master uses small gouges with mushroom handles. They are old, and I cannot find anything like that on the market today.

Pfeil makes them. I have a few that I use for carving scrolls.

I know everyone likes to brag about how sharp their gouges are; however, IMHO you need lots of other tools especially files. My favorites are needle files (2mm x 100mm) for string grooves and cleaning small details. I also have files for french facing the bridge and others for shaping curves on scrolls. I may own more files than gouges.

BTW, I use a power Flexcut gouge. I can use the gouge blades with a separate handle for detail work, say, on a scroll. The power gouge is very gentle. I can carve a plate without a cradle. I just put the wood plate on a router mat and carve away.
