I've never seen a bridge blank from the "major" blank suppliers that have ankles as narrow as those commonly seen on bridge "websites."

Is there any musical reason one might want wide ankles as supplied? And if not, why do they make us go to the bother of trimming them down?

The first part - I'll let someone who knows answer.

The end part - we must trim just about everything on a blank bridge to whatever degree we feel is necessary. If the dealer trimmed the bridge, instead of having it large all over, with excess material everywhere, well you can imagine the problems that would bring on!

Personally I don't trim ankles on student bridges at all - ever, because in my opinion, it just isn't necessary.
On professional bridges, they get trimmed (again, in my opinion) - often, to very different degrees - depending on a few things (like weight, tone, looks, etc.)

I don't think of it as trimming the ankles. Changing the ankles is a necessary part of sculpting the arch between the feet.

Shops appear to have various philosophies about the exact width. At one extreme, I've seen many Beare bridges around 2.5mm there. At B&F we shot for 3.0mm.
