Varnished violin with oil varnish in November, several coats on successive days. It seemed plenty dry each time. Now, in March, it smells like rancid oil. Must not have let it dry between coats long enough. I suppose the solution is to take off most or all of the existing varnish and start again; sound right?

Don't know much about varnishes, but... what type/make/age of oil were you using?

I'm not sure I can help, because I've never encountered this problem, but if you are otherwise happy with the varnish job, I would leave it alone for several more months to see (smell) what happens. It may be possible that your varnish coats were too thick and, while seeming dry on the outside, were not inside.

I am only familiar with the varnish I make, which has no driers and is applied very thinly, then dried in a UV box. I have read that cobalt driers skin quickly on the outside and dry through slowly. I don't know that from experience and your varnish may not contain cobalt, but I have no other suggestions except to use thinner coats, allow more time between and maybe set up a UV box. At any rate I can't see any reason that time should not fix it.

May be rancid and not dried fully? I have some dried rancid oil. It doesn’t smell bad after it dried.
